Hot Honey Feta Chicken
For the Chicken
1½ lbs boneless, skinless chicken breasts
1 tablespoon extra virgin olive oil
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon lemon juice
For the Hot Honey Sauce
¼ cup honey
1-2 teaspoons chili flakes (adjust to spice preference)
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
1 garlic clove, finely minced
Optional: pinch of cayenne pepper for extra heat
For Garnish
½ cup crumbled feta cheese (reduced fat)
Fresh parsley chopped
Lemon zest or juice
1. Prepare the Chicken
Pat the chicken dry and place in a bowl or on a tray.
Drizzle with olive oil and lemon juice, then rub in paprika, garlic powder, onion powder, cumin, salt, and black pepper.
Let marinate briefly (10-15 minutes), or up to 1 hour in the fridge for deeper flavor.
2. Bake the Chicken
Preheat oven to 400°F
Arrange seasoned chicken in a baking dish and drizzle with oil.
Bake for 20-25 minutes, or until internal temp reaches 165°F
3. Make the Hot Honey Sauce
In a small saucepan, combine honey, chili flakes, olive oil, garlic, and lemon juice.
Heat gently over low-medium heat for 2-3 minutes until bubbly and fragrant.
Taste and adjust heat with more chili flakes or a pinch of cayenne if desired.
4. Assemble and Finish
Pour hot honey sauce over the cooked chicken.
Sprinkle crumbled feta over the top.
Let sit for a few minutes so the feta begins to soften or melt slightly.
Garnish with parsley or lemon zest.
5.Serve with a side of veggies or rice.
