Salmon Tacos & Pineapple Salsa
(Substitute chicken if you’d like)
INGREDIENTS
* 3 Salmon Filets
* ½ tsp Salt and Garlic Powder
* ¼ tsp Black Pepper, Onion Powder, Cumin, and Chipotle seasoning
* ⅓ tsp Smoked Paprika
* 1 tbsp Lime Juice
* 1-2 tbsp Avocado Oil
Pineapple Salsa
* 1 cup Pineapple, diced
* ⅓ cup Red Bell Pepper diced and Green Bell Pepper diced
* ¼ cup Red Onion diced, jalapeños diced, salt, pepper, Cumin and Garlic powder
* 2 tbsp Cilantro chopped
* 2 tbsp Lime Juice
Avocado Cilantro Lime Dressing
* 2 cups Cilantro
* 1 Avocado
* 3 Garlic Cloves
* 1 Jalapeno
* ⅓ cup Greek Yogurt
* 2 tbsp Honey
* ½ tsp Salt
* ½ tsp Ground Black Pepper
Salmon Taco
* 1 cup Red Cabbage shredded
* Pineapple Salsa
* Cilantro Lime Sauce
* Corn or Flour Tortillas
INSTRUCTIONS
* Prep the cilantro lime sauce and pineapple salsa. Set aside in the fridge. You can also make these the day before.
* To make the salsa, mix all the ingredients together in a bowl.
* Avocado Cilantro Lime Dressing: Blend all the ingredients together until smooth.
* Pat dry and cut the salmon into small cubes. Season with salt, pepper, paprika, garlic powder, onion powder, cumin, chipotle seasoning, and lime juice. Rub it all together well, making sure each piece is entirely coated.
* Heat the avocado oil in a skillet over medium heat. Add the salmon bites and sear for about 5 minutes until they are golden and cooked through. Make sure to flip them and cook on both sides.
* Assemble the tacos: On a flour tortilla, add salmon bites, cabbage, pineapple salsa and avocado cilantro lime dressing. Enjoy
